In addition to short courses offered through the Office of Continuing Professional Education, the Department of Food Science maintains a strong link to the consumers and food producers of New Jersey through its Extension Specialist, (Dr. Don Schaffner).

Recent research on hand washing in Dr. Schaffner’s lab exemplifies the connection between scholarly research and extension in Food Science: microbial experiments on the efficacy of hand washing were conducted and published in scientific journals, and from this original research an extension fact sheet is being created to communicate the findings to New Jersey food workers.
